When I was doing my initial research into the history of earth ovens, I read that in Ukraine, from 20,000 BC, people were using pits with hot coals, covered in ashes, and then they would wrap their food in leaves and set it on top of the coals, and cover it with earth. It was quite humbling to think how far back this method was used for every-day cooking. Imagine the earths beautiful, natural and untouched appearance way back then? Wow! I pondered this for a while. I had questions.

I pictured how the leaves influenced the taste of say…fresh game following a successful hunt? How the moisture in the green leaves reacted to the heat, creating a steaming affect with a smoking affect? These unanswered questions drove me to delve deeper into my research.

I learned that many different, ancient, and even modern cultures used and continue to use many different herbs, greens, and other natural elements to enhance the flavor of their foods and to fuel their fires. This opened my eyes to the new flavor possibilities and the vast selection of natural and healthy cooking enhancers tried and proven by peoples and civilizations from all corners of the earth. We’ve tried to duplicate a few for you to enjoy.

Much like flavored hardwood chips can flavor and enhance foods in the cooking/smoking process, so also can herbs, fruits, and vegetables. The Earth Oven crew spent days testing and trying each special flavor, using multiple combinations of quality herbs, vegetables, and spices, collectively critiqued and documented, using every kind of meat and vegetable imagined, under many different cooking/smoking/heating conditions. When one combination failed, we tried another, over-and-over, until we reached a unanimous approval of, “These flavors are the best ever!” Each trial was an experience we won’t soon forget.

In the end we have our Ancestors to thank. It was they who passed on this ancient cooking tradition, and we were fortunate to have added some other amazing discoveries along the way, such as… figuring out a great way to increase smoke! By using a unique bi-hardwood and grain mix to our recipe we were able to really boost the natural smoke output creating a great “smoke bomb” effect!
