Earth Oven Chile con Carne

INGREDIENTS

  • 2 Tablespoons black pepper; Fresh-ground
  • 6 green Chiles or 2 jalapeños
  • 1/2 clove Garlic; peeled
  • 1/2 Raw Onion; peeled
  • 7-8 lb Pork Boston butt; cut in or fat trimmed and left whole. Your preference!
  • 1/4 c Lard; or vegetable oil
  • 3 Tablespoons cumin seeds; roasted
  • 2 Teaspoons Dried oregano;
  • 1 Tablespoon  Salt
  • 1 Tablespoon Season Salt
  • 1 Tablespoon Brown Sugar
  • 1 Cerveza of your choosing.

Earth Oven Huatia Style CookingFirst mix the garlic, cumin, oregano, salt, seasoned salt, brown sugar, and pepper together. Rub the pork cubes or whole butt with the spice rub and let sit for 1 hour. Warm the lard or oil in a Dutch oven or another suitable deep pan over medium heat in your Earth Oven. (Place on your grill rack for safely lowering and raising the meat in and out of the oven) Add the pork to the hot lard and sear the meat quickly. Next add minced garlic, onion, and chiles. Poor in the Cerveza and cover.  Let the heat reduce to simmer and cover the pan. Cook the carnitas for 3.5-4 hours at low – medium temperature. Approx. 225 degrees. Adjust up or down according to your desired cooking time. This is a great way to cook because you may keep your Huatia Earth Oven coals going adding 1:4 Ratio Beer and water to the pot if necessary. At 3-5 hours the meat falls apart.  When the temperature level is low you may remove the lid to your pot to infuse your pork with great smoky flavor. Then place the lid back on the pot and administer more pre heated coals if necessary.

Earth Oven Chile con CarneNote: Lid off and high heat can remove the liquid quickly and scorch your carnitas. Monitor accordingly. Last, remove your tender mouth watering Huatia carnitas, with a nicely glazed, browned, and crisp outer bark!  Drain pork.  Serve with salsa, hot sauce, or chile verde sauce, cotija, frijoles, and warm maize tortillas! And now you’re ready for some Huatia carnitas tacos! Or you may reserve for enchiladas, burritos, tostadas etc.

Don’t forget to throw in some potatoes or native tubers! Place them on your grill rack around your Dutch oven or you may drop them in over hot stones lined on the bottom of the Earth Oven! After your selected fuel source has burned down sweep the coals over the stones. Depending on your heat level, potatoes in the Earth Oven typically cook in 30 minutes to an hour.  Be safe when retrieving hot potatoes. We recommend metal tongs and a high heat rated oven mitt.
