Earth Oven Real Pit BBQThe best cuts of meat for this Luau are two 8-to-10 lb. “bone-in” Pork Butt Roasts or a Full Pork Shoulder. Better yet, if you’re intending to get “more authentic,” a whole “Suckling Swine Roast” is the way to go!

Recommendations:
Scale-up the seasoning ingredients commensurate with any increase of weight. The Earth Oven “Rotisserie Attachment” is best used to “open” or “close” roast your meat selection!

Ingredients:

  • 1/2 cup Kalua or Hawaiian season salt
  • 1/2 cup Sea Salt or Kosher Rock Salt

“Lomi” means “massage” in Hawaiian
So “lomi,” the rub into the Pork Butt Roasts until they are thoroughly coated.

After your coals, or heated lava or river rocks, are ready, place banana leaves or lettuce leaves on top of your grill rack and place the Roasts on top ofthe greens. Finish by adding green onion on top of the Roast. Keep the cooking temperature low. We recommend below 300 degrees, with an averageideal temperature of 225 – 250 degrees, and a minimum “holding temperature” of 185 degrees, for 4-6 hours; 6-8 hours if you’re cooking at anaverage constant “holding temperature” of 185- 200 degrees.

You may have to add coals during the cook to keep the temperature in the desired range. This is a great time to check internal oven temperature, and baste, baste, baste!

Traditionally, Pork luau style was not “injected,” but if you want to try a new great tasting approach, you may try this “Injection Recipe.”

Pork Injection:

  • 2 cups fresh pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup kosher salt
  • 1.5 tbsp Worcestershire sauce
  • 1.5 tbsp soy sauce
  • 2 tbsp dry mustard powder

You may also wish to “spray baste” during your cook!

“Spray Baste” Recipe:

  • 1.5 cups water
  • 1/2 cup apple cider vinegar
  • 1/2 cup Mirin or Japanese “sweet wine”
  • 2 Tbsp brown sugar
  • 2 Tablespoons Hawaain Seasoning
  • 1 teaspoon mustard powder

Bring these ingredients to a quick simmer, mix thoroughly, and let cool.
Add to spray bottle or baster.
