The New England Clam & Lobster Bake dates back as far as 2,000 years. It’s older than America itself! Native Americans utilized the earth to cook lobster, clams, crab, and other seafood, shellfish and meats long before the settlers arrived. Quickly, the early Pilgrims picked-up on this new cooking method of using an Earth Oven, and that tradition has remained in and around New England and the surrounding Atlantic Coast even today.
Here’s how it’s done. After your Earth Oven is properly installed, line the bottom with smooth rocks. Then start a wood fire on top of the rocks contained in the Earth Oven, and after the coals have burned down, “sweep” the ashes in between the cracks in the rocks as further insulation. The glowing, heated rocks will re-direct the heat inside the oven.
Next, layer seaweed on top of the heated rock bottom, and place lobster, clams, muscles, etc. into the oven. You may also add carrots, onions, etc., and/or corn on the cob. Season as you desire. Place the Lid on your Earth Oven and quickly you will smell your food steaming away to mouth-watering goodness!
