Earth Oven Real Pit BBQNew England Lobster Clam BakeThe New England Lobster and clam bake is a great “Native American” tradition. It really is a great example of two historic cultures coming together to enjoy and utilize an absolute necessity… cooked food!

Traditionally “the bake” would take place right on the beach! This is totally doable with your easy-to-fold-up and transport Earth Oven. If you’re not at the beach, that’s ok! You can try this cook in your own backyard!

Here’s how it’s made (Serves 4 – 6):

Ingredients

  • 3-to-5 pounds round clams
  • 6 large pealed potatoes
  • 4 medium pealed onions
  • 6 ears of corn (husk left on w/silk removed)
  • 8 live lobster
  • 6 lemons cut into wedges
  • Lots of melted butter!
  • 3/4 cup of chopped chives (for garnish)
  • Fresh Sea Weed

Directions

Prepare the Earth Oven by first placing flat beach/river/lava rock at the bottom of the Earth Oven Grill. Using your favorite wood as the heat source, allow the wood to burn-down until the bottom of your oven is red hot! The “burn-down” usually takes up to 1-2 hours.

New England Lobster Clam BakePreparing the food is best done while the Earth Oven is heating up!

Clean and peel potatoes, corn, and onions.

You may place the clams, live lobster, potatoes, corn, and onion directly on your Earth Oven Grill Rack or Griddle. Seasoned as you wish, a little Old Bay Seasoning or just salt tastes great.

When the coals are ready, brush them into the crevices between the rocks, then add a layer of seaweed at the bottom. This acts as the catalyst for steam and great seafood flavor!

You may also place food directly on the seaweed. This is a common method, but it does make it difficult to retrieve your food. Placing the seaweed on top of one grill rack and placing in the lowest position really works great!

Cook the potatoes until they are steamed thoroughly (about 1 hour). When finished, use the lemon, chives, and butter as dressing and garnish.

Lobster Clam Bake Then place the food on your other Rack or Griddle, and place it in the highest Rack setting. If you really have a lot of food you may utilize both of the Grill Racks and the Griddle! Now that makes for a “Real” New England Bake!

After the lobster, clams, and veggies are added you may add another layer of seaweed. Then. quickly secure the Earth Oven Lid and the wonderful aromas should emanate from the Earth Oven immediately! Cook time approximately 45 minutes to 1 hour.

Remember too, it’s important to keep the seaweed fresh. The best way to keep it fresh is to keep it in sea water. In New England, they often use canvas or potato sacks that are soaked in seawater to get a similar taste.
